ABOUT THE TXOTX RITUAL:
Basque people pay homage to cider in the form of an interesting
ritual known as the txotx. During the txotx season, between the months of January and April, the cider houses open their doors and invite patrons to taste cider directly from the kupela or barrel, before it has been bottled.

To the cry of "txotx!", the cider-maker opens one of the kupelas and anyone who wishes can come and fill their glass directly from the barrel.
